Ingredients
Harvest Fresh Cubed Sweet Potato (400g)
Leeks (shredded)
25g Butter
Chicken or Vegetable Stock, 400ml
Ground Black Pepper
4 thick slices of Bacon (optional)
Chives for Garnish
What You Need
Directions
Heat soup pot to medium, and melt butter
Saute the Leeks in the butter for 5 minutes
Add the stock and sweet potato, and bring to a boil.
Simmer for 15 minutes, until the sweet potato is soft and cooked.
Season the mix with Black Pepper to taste and cool.
Place the mix in a food processor and blend until smooth.
Return to pot, and heat until the desired temperature is reached. If necessary, use a little water to thin to desired consistency (add slowly!)
(Optional) Grill the bacon until crispy, chop into bite-size pieces, and use for garnish!
Garnish with chives, and serve
